Rose Gray, co-owner & co-chef of the River Café in London, has been a huge influence on me and my cooking. Rose passed away recently, and I felt the need to pull out some of my River Café cookbooks and make something in her memory. After buying a pork shoulder at the Halifax Farmers' Market on Saturday, I decided to make the milk braised pork shoulder recipe that is found in their first cookbook (the blue one).
